20 Minute Meals for a Busy Family

It’s that time of the year again! The kids are back in school, sports and clubs are starting up, and somehow between all the carpool schedules and extra activities, you still have to make dinner. As a busy Mom and Realtor, I can say the struggle is real! And I’m sure many of you working parents can relate too. While the drive through window may seem like the fastest option, sometimes you still want a home cooked meal. To help, we compiled a list of our five favorite twenty minute recipes perfect for when you just can’t sit at another drive through window!

Meatless Mondays

For Monday, try going vegetarian! Meals without meat are often overlooked but can be just as delicious as their meat filled counterparts. One of our favorite vegetarian dinners is a Stovetop Southwest Mac ‘n’ Cheese! This delicious dinner is a twist on the classic mac ‘n’ cheese, but features black beans, bell peppers, and salsa! This is perfect for both kids and parents and isn’t bright orange like the stuff that comes from a box!

Taco Tuesday

Instead of doing a classic taco bar this Tuesday, maybe try a taco soup! This recipe is full of tomatoes, beans, and cheese! Top it with tortilla chips to get that taco crunch, and for the finishing touch, add a dollop of sour cream. Not only will this enhance the flavor, but it also helps make it insta-worthy!

Wild Card Wednesday

Congratulations! You finally made it to hump day! Treat yourself to some carbs and make pasta for dinner! We recommend this amazing Brown Butter Parmesan Pasta from Kitchn. This is essentially the adult version of the buttered noodles you loved so much as a kid. Make extra, you’re going to want to bring it in your lunch tomorrow!

Takeout Thursday (kind of)

It’s almost Friday, and while the exhaustion of the week is settling in you’ll probably be tempted to order a pizza and move on. But why pay around 20 dollars when you can spend 20 minutes to make one at home? This Wood Fired BBQ Chicken Pizza is tried and true, and never disappoints. Instead of dough this recipe utilizes naan flatbread truly making it stand out! While the directions say it will take forty minutes, our hack is to use a rotisserie chicken which cuts that time in half!

Fish Friday

On the last day of the work week, maybe have something a little lighter. This easy twenty minute fish recipe will work perfectly as a meal to cap off the week!
